This is my most asked for recipe to bring to someone's house. I don't know why it is called zucchini pie when you make it in a 9x13 inch pan, but I don't argue with greatness. You can easily cut this recipe in half, but I don't think you will want to. You can use this as an appetizer, just cut it in small squares or you can use it as a side dish. I always have this on Thanksgiving and for summer graduation, or birthday parties

Ingredients For zucchini pie

4eggs, beaten

3 czucchini, shredded
-
1 smonion, shredded
-
1/2 cgrated parmesean cheese

1/2 cmozzarella cheese, shredded

1/2 ccheddar cheese, shredded

1/4 colive or vegetable oil

salt and pepper to taste

1 cbisquick
-
2 Tbspparsley, chopped
How To Make zucchini pie

1Preheat oven to 350. Grease a 9x13 pan. In a large bowl, mix all the ingredients together. Bake 35-40 minutes, until golden and it springs back when touched. Cut into squares. Can be served warm or room temp.
