This is what I am making to pick nick with on our road trip to Ohio. It is my own version of one my mom used to make for cookouts when I was a kid.

Ingredients For vegan broccoli and cauliflower salad

1 bunchcauliflower, cut up into small flourets

1 bunchbriccoli, cut into small flourets

1 canblack olives, sliced

1 jargreen olives, with pimentoes sliced

1 ptcherry tomatoes, halved

1 pkgvegan mozzarella cheese
-
1/2 cbacos bits, bacos chips(they are vegan)

1 citalian dressing (your choice)
How To Make vegan broccoli and cauliflower salad

1I like to blanch my broccoli and cauliflower for about 3 minutes in boiling salted water, and then shock in ice water. You can leave it raw, but blanching it gives it a nice vibrant color.

2put all ingredients into a large bowl and toss.

3let marinade in the fridge for 30 minutes or over night. this is one of those dishes that is better made the night before.
