I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Ingredients For texas caviar

  • 1 can
    white shoepeg corn
  • 1 can
    black-eyed peas
  • 1 can
    black beans
  • 4 oz
    chopped pimento
  • 4 oz
    chopped jalapeño or mild green chiles
  • 1 c
    diced celery
  • 1
    red onion, diced
  • 1 c
    vegetable broth
  • 1/2 c
    apple cider vinegar
  • salt and pepper to taste

How To Make texas caviar

  • 1
    Drain & rinse canned vegetables
  • 2
    Mix with rest of vegetables
  • 3
    Mix vegetable broth and vinegar. Pour over vegetables. Stir well.

    Mix well & marinate overnight
  • 5
    Drain marinade & serve with scoopable chips
