Ingredients For sweet corn fritter

2ears of sweetcorn, about 2 c cut off the cob

1/2 cflour

1/3 cyellow cornmeal
-
1 tspsalt
-
1/2 tspbaking soda
-
1egg
-
1/2 cmilk
-
4 Tbspolive oil
-
1 Tbspbutter
-
1/2 cgrated cheese (optional)
-
2 Tbspbacon bits (optional)
-
1/4 cfinely minced onion (optional)
How To Make sweet corn fritter

1Sift dry ingredients together in a small mixing bowl.

2Make a well in the dry ingredients, add the egg and milk.

3Stir until just combined, mixture will be lumpy

4IF you are using the optional ingredients (and I highly recommend them) add them now and stir all together gently.

5Fry these up in the melted butter and olive oil at a med heat, make sure you skillet is hot before adding the fritters.....also, you only need 1/8 to 1/4 inch of oil to fry these in. Fry them until lightly browned on each side, remove to paper towels to drain and enjoy....you can salt and pepper to taste.

6We like these for breakfast, but they make a nice side for fish or grilled foods too.
