kathy's spinach brownies
We had a New Year's Eve party at my parent's house, where everyone brought an appetizer. Their friend Kathy Garrett brought these, and they were fantastic!

Ingredients For kathy's spinach brownies

1 cflour

1 tspbaking powder

10 ozfrozen chopped spinach, thawed, squeezed dry, do not cook

1 cmilk

2eggs, beaten

4 Tbspmargarine, kathy prefers butter (see notes)

12 ozshredded sharp cheddar cheese (3 c)
How To Make kathy's spinach brownies

1Mix all together. Place in lightly buttered 9x9. Bake at 350 degrees for 30-35 min. Loosen from sides of pan as soon as you remove it from the oven. Cool slightly before cutting into squares. May be frozen and microwaved or reheated at 400 degrees for approx. 20 min.

2I made this for book club in Jan 2023. Kathy said use real butter, leave to soften on counter. If it needs to be softer, put in microwave to soften but do not melt.

3We made this to serve 8 people. They also served shrimp and some mixed nuts. We cut this into 5x5 pieces, and there were only about 10 pieces left.
