My husband and I came up with this recipe after collecting a lot of produce from our home garden.

These fried green tomatoes are heavenly and perfect for summertime. Grilling the tomatoes first cooks them a bit before frying and infuses a smoky flavor. With a nice crunch, it also means they don't have to fry as long to achieve a perfect golden brown. The slightly spicy fresh salsa on top is the perfect accompaniment.

Ingredients For smoky fried green tomatoes with fresh garden salsa

3green tomatoes, sliced thick

2 lgeggs, used as a wash

1 ccornmeal or Panko crumbs

1 cfresh homemade salsa
-
sour cream
- FRESH SALSA INGREDIENTS

4fresh red tomatoes, diced
-
1onion, diced (can substitute fresh scallions)

2jalapenos, chopped
-
2 clovegarlic, chopped
-
cilantro, chopped (amount up to you, reserve some for serving)

1 dashcumin

salt and pepper, to taste
How To Make smoky fried green tomatoes with fresh garden salsa

1Slice green tomatoes. Rub olive oil, salt, and pepper on the tomatoes before placing them on the grill.

2Place on a hot, smoky grill. Grill for 3 minutes per side. Cool for 5-10 minutes.

3Take grilled tomatoes and dip in egg wash and cornmeal twice.

4Since tomatoes are already cooked fry slices in medium hot oil until golden brown on both sides. Drain on paper towel.

5Prepare the fresh salsa by combining all ingredients in a bowl.

6Place 2 slices on a serving plate. Top with a spoonful of sour cream and fresh salsa on top. Garnish with additional cilantro (optional).
