This is an onion lovers delight! I adapted it from a recipe that I got from somewhere years ago.

Ingredients For six onion pate

  • 3 Tbsp
    olive oil
  • 1-2
    leeks, diced (depending on how much you like leeks - their flavor can be strong)
  • 1
    vidalia onion, diced
  • 1/2 c
    shallot, diced (1 or 2 shallot, depending on size)
  • 2 Tbsp
    garlic, minced (6 or 7 cloves depending on size)
  • 3
    green onions, sliced
  • 2 tsp
    thyme
  • salt and pepper to taste
  • 3 Tbsp
    mayonnaise
  • 2 Tbsp
    chives, chopped

How To Make six onion pate

  • 1
    Saute onion, leeks, garlic, shallots, green onion and thyme in olive oil until soft and transluscent.

    Cool completely then place in food processor along with the mayonnaise and chives. Process until desired smoothness.

    Chill about an hour so flavors blend, then serve cold (or if you prefer, allow to come back to room temp) with crackers or pita or bagel chips.
