Ingredients For puffed up chicken/spinach puffs

    boneless, skinless chicken breasts, cubed
  • 3 Tbsp
    chopped onion
  • 3 tsp
    minced garlic
  • 3 c
    baby spinach
  • 1-1/2 c
    low-fat ricaotta cheese
  • 1/2 c
    grated parmesan cheese
  • 6 Tbsp
    softened butter
  • 3
    10 oz cans refrigerated crescent rolls

How To Make puffed up chicken/spinach puffs

    Spray lg skillet w/ cooking spray. Heat ovem to 325, lightly spray a lg baking sheet w/ cooking spray. Place skillet over madium-low heat. Cook and stir, chicken cubes, onion and garlic for 5 mins.

    Stir in spinach. Cook, stirring until spinach is wilted, about 5 mins. Transfer mix to lg bowl. Combine w/ ricotta cheese, parmesan cheese and butter. Mix until creamy.

    Unroll dough and pinch 2 triangles together to make a rectangle. Repeat w/ remaining dough. Place about 1 tbsp of mix onto center of each recatngle. Fold corners together and pinch to seal. Place puffs on baking sheet. Bake 12 mins, or until golden brown.
