Talk about a Sicilian treat. This is a really good fritter. My dad use to take us to this Sicilian place in Brooklyn, NY that was all Sicilian food. Mr. Joe made these on the spot. I would order them with a side of string beans that were just as fabulous. I wasn't allowed to just order the fritters, my mom said I had to have something else.....lol

Ingredients For panelles (chick pea fritters)

  • 1 c
    chick pea flour
  • 1 1/2 c
    water
  • pinch of salt

How To Make panelles (chick pea fritters)

    In a 4-quart pot combine chicke pea flour, water and salt
  • 2
    Whisk until smooth and not lumpy, on med. high heat.

    Lower heat when mixture starts to bubble, stirring constantly and cook for about 10 minutes.

    Remove from heat and smear mixture on either a marble, silpac or our clean counter surface. Spread to less than a 1/4 inch and allow to cool.

    Cut into rectangles or squares and fry like cutlets until golden brown, drain on paper towels.
