A delicious change of pace to the regular version of spinach dip. Nice and spicy -- feel free to leave out the "pickled" jalapeno if you want the dip less spicy.

Ingredients For not your average baked spinach dip

2 pkg10-oz. pkgs. frozen chopped spinach, thawed

1/2 conion, minced

1pickled jalapeno, minced (optional)

8 ozcream cheese, softened

2 cmonterrey jack cheese

1/3 chalf and half
-
1 tsphot sauce
-
1 canrotel tomatoes and green chilies

1 cfresh roma tomatoes, chopped
How To Make not your average baked spinach dip

1Preheat oven to 350 degrees.

2Place thawed spinach in a hand towel and squeeze to remove excess moisture.

3Combine spinach with the onion, jalapeno (if using), cream cheese, grated cheese, half and half, hot sauce and rotel in a bowl. Mix well and then fold in fresh tomatoes.

4Prepare a 2 quart baking dish and spoon mixture into dish. Bake for 20-30 minutes or until bubbly.

5Serve with tortilla chips.
