marinated mushrooms
I love mushrooms and eat them raw or cooked. This is a super simple appetizer that will disappear quickly. The recipe can easily be halved or scaled down.

Ingredients For marinated mushrooms

2 lbmushrooms, cleaned

2 15-oz canarrtichoke hearts, drained

3/4 cwater
-
1/4 colive oil
-
1 clovegarlic, chopped

1/4 tsppeppercorns
-
1/4 tspground thyme
-
1/4 ccider vinegar
-
2 Tbspsalt (i use much less)

1/4 tspdried basil
-
1 Tbspbay leaf
-
1/4 cfresh lemon juice
How To Make marinated mushrooms

1Half mushrooms through stems.

2Quarter artichoke hearts. (I use canned quartered artichokes).

3Combine artichoke hearts and mushrooms.

4Combine remaining ingredients and heat, but do not boil.

5Pour over mushrooms and artichoke hearts.

6Refrigerate overnight.

7Remove peppercorns and bay leaf before serving.
