marinated mushrooms

I love mushrooms and eat them raw or cooked. This is a super simple appetizer that will disappear quickly. The recipe can easily be halved or scaled down.

Ingredients For marinated mushrooms

  • 2 lb
    mushrooms, cleaned
  • 2 15-oz can
    arrtichoke hearts, drained
  • 3/4 c
    water
  • 1/4 c
    olive oil
  • 1 clove
    garlic, chopped
  • 1/4 tsp
    peppercorns
  • 1/4 tsp
    ground thyme
  • 1/4 c
    cider vinegar
  • 2 Tbsp
    salt (i use much less)
  • 1/4 tsp
    dried basil
  • 1 Tbsp
    bay leaf
  • 1/4 c
    fresh lemon juice

How To Make marinated mushrooms

  • 1
    Half mushrooms through stems.
  • 2
    Quarter artichoke hearts. (I use canned quartered artichokes).
  • 3
    Combine artichoke hearts and mushrooms.
  • 4
    Combine remaining ingredients and heat, but do not boil.
  • 5
    Pour over mushrooms and artichoke hearts.
  • 6
    Refrigerate overnight.
  • 7
    Remove peppercorns and bay leaf before serving.
