This is a quick, easy and delicious "meze" appetizer, found everywhere in Greece. Other than a delicious meze, these peppers can also be served as a side dish along with roasted meats or sausages. Paired with a glass of dry white wine and pieces of crusty bread. If you make a big batch store in a glass jar covered with olive oil. These peppers will keep for 2-3 weeks and you will have a delicious & unique appetizer plus a flavorful oil as a bonus to dip your crusty bread in.

Ingredients For greek fried peppers

approx.1 lbsweet peppers (green, red or hot)

olive oil for frying

sea salt

approx.1/3 cwine vinegar

thinly sliced garlic for garnish (optiional)
How To Make greek fried peppers

1Wash the peppers and pat-dry With a fork, poke the peppers a few times, on both sides. This is done to prevent peppers from exploding while frying. While frying be careful cause peppers can still spit some oil.

2In a 3 quart saucepan with high sides add about 1/4 cup of oil, should be enough to fry 1 pound of peppers. I sometimes use my wok which has high sides. Bring the oil up to medium-high heat and fry your peppers in batches, turning frequently, until the skins are just golden- brown.

3Just before removing from the pan, pour vinegar over the peppers and leave for 1-2 minutes over medium heat to absorb it. While still hot season with some salt.

4Carefully remove cooked peppers from the pan to a platter. They'll be soft and might easily split. It is very important to NOT DRAIN peppers on paper towels. The oil is so flavorful, you'll want to enjoy every drop with some crusty bread. KALI OREXI! ENJOY!
