- CREAM SAUCE

2 Tbspolive oil

1 smwhite onion, chopped

1/2 smorange or red bell pepper, chopped

1 clovegarlic, minced

1 cvegetable stock

2 Tbspall purpose flour

1 cheavy cream

How To Make fried green tomatoes with cream sauce

1To make the tomatoes, slice the tomatoes into 1/4” thick slices. Mix the milk and eggs together in medium bowl and add salt and pepper.

2Mix the cornmeal, flour, sugar, and cajun seasoning in a deep dish pie plate. Heat oil in skillet over medium high heat.

3Dip the tomatoes in the egg mixture and dredge in the cornmeal mixture. Fry in the oil until brown on both sides. Drain on paper towels.

4To make the cream sauce, heat the oil and butter in a heavy saucepan until melted. Sauté the onions, pepper, and garlic until tender. Add the vegetable stock, bring to boil and cook for 5 minutes. Stir in the flour until the sauce thickens. Add the cream, return to a boil, and cook another 2-3 minutes. Taste and add more salt or pepper, as needed. Stir in the cajun seasoning. Drizzle over the fried tomatoes.
