These are so good and so easy. You may want to add just a touch of green food coloring to dress them up, but it is not absolutely necessary.

Ingredients For even i can make 'em pickles!!!

  • 2 lb
    small zucchini
  • 2
    small onions
  • 1/4 c
    table salt
  • 2 c
    white vinegar
  • 2 1/4 c
    white sugar
  • 1 tsp
    celery seed
  • 1 tsp
    turmeric
  • 2 tsp
    mustard seed
  • green food coloring

How To Make even i can make 'em pickles!!!

    Wash and slice the zucchini pretty thin.

    Peel and slice the onion thin.
  • 3
    Toss zucchini and onion together.
  • 4
    Cover the zucchini and onion slices with the water and salt.

    Let stand for two hours.

    Drain thoroughly.
  • 7
    Bring the vinegar, sugar, celery seed, turmeric and mustard seed to a good boil.

    Add green food coloring, if desired.

    Let stand two more hours.

    Bring the entire mixture to a boil, and boil for five minutes.

    Pack in hot sterilized jars and seal.
