This is an easy recipe. Everyone loves this on crackers, or Italian bread. whenever I am having company, and cooking an Italian meal, we always have this While the rest of the meal is cooking. Tried and true

Ingredients For eggplant caviar

  • 1
    onion chopped
  • 1
    green pepper chopped
  • 3-4 clove
    garlic chopped
  • 1/4 c
    olive oil
  • 1
    eggplant-peeled and diced
  • 1 can
    tomatoe paste 6 oz.
  • 1/4 c
    red wine vinagar
  • 1/4 c
    green stuffed olives
  • 2
    teaspoons sugar
  • 1
    teaspoon sweet basil flakes
  • salt and pepper to taste

How To Make eggplant caviar

  • 1
    Saute onion, pepper, and garlic in olive oil, until translucent
  • 2
    Add-eggplant, tomato paste,vinegar,olives,sugar, basil, salt and pepper
  • 3
    Add water as needed. I add water so it won't stick. Cover and simmer 1 hour, Stirring occasionally
  • 4
    Cool and serve on crackers or bread-but can also be eaten hot. I like it cold better.
