egg rolls
Almost anything can go inside an egg roll. I learned to make these almost 40 years ago and they have always been one of my mother's favorite foods. My friend always used ground pork, but I also love shrimp. You can go meatless or combine a variety of meats. They are crispy and freeze well. This recipe makes A LOT. Freeze them for later and simply put in the oven to reheat. I serve them with sweet and sour sauce. NOTE: I even tried cherry pie filling. Apple Pie filling with Ice Cream would be delicious!

Ingredients For egg rolls

2 pkgegg roll wraps
-
1/4 csesame oil or more
-
1 bagcoleslaw (cabbage with carrots)

1/2green cabbage, chopped fine

1/8 tspginger
-
4green onions, sliced thin (tops too)

1/2 pkgrice vermicelli (taste of thai). cut up into small threads.

1 lbmeat (shrimp, chicken, ground pork...your choice)

1/4 coyster sauce
-
dashtamari or low sodium soy sauce
-
1/2 tspwhite pepper
-
pinchsalt (to taste)

1egg yolk

How To Make egg rolls

1In a deep skillet, add sesame oil. When hot, add coleslaw mix and chopped cabbage, about 1/8 tsp. ginger, white pepper and a pinch of salt. Saute until soft. Remove to a large bowl. In the same skillet add shrimp/meat cook through. Drain the juices and add meat to the bowl of cabbage.

2Pour hot water over rice noodles OR add to boiling water to noodles to soften. Drain THOROUGHLY, add to cabbage. Slice onions, add to mix. Toss everything with oyster sauce and a little tamari or soy sauce. Taste....add more seasoning if needed.

3Place one egg roll wrap on waxed paper or clean counter. Put about 1/4 cup of cabbage mix in the center of the egg roll. Use your finger to dot each corner of the wrap with egg yolk. This is your glue to seal the wrap. Fold up bottom half, fold in sides and roll up.

4Bring oil in deep fryer to 350F. When oil is hot, fry two at a time until golden brown. Drain on paper towels.
