I have been searching for a good falafel recipe and this is it.. tweaked it a bit for more flavour. This comes from Cooking light

Ingredients For crispy falafels

1/4 cminced red onion

1 Tbspdijon mustard

3 clovegarlic

1 tspground cumin
-
1/2 tsppaprika
-
1/4 tspground black pepper

1/8 tspsalt

1 (15 1/2) canchick peas (garbanzo beans)

2 (1 oz) slicebread, whole wheat

1 lgegg
-
1 lgegg white
-
1 tspground coriander
-
olive oil, extra virgin

2whole wheat pitas
How To Make crispy falafels

1Combine first 12 ingredients in a food processor; pulse 6 times or until well blended (mixture will be wet).

2Heat olive oil in a large nonstick skillet over medium-high heat. Spoon about 1/3 cup chickpea mixture per patty into pan; cook 4 minutes on each side or until golden brown.

3Warm up your pitas, you can spread them with hummus, tahinne or tzatziki. I like mine with hummus and loads of salad!
