Ingredients For creamy cucumber bites

  • 1 lg
    english cucumber
  • 4 oz
    semi-soft goat cheese
  • 1 sm
    shallot, minced
  • 3 Tbsp
    fig jam
  • 1 Tbsp
    fresh thyme leaves, chopped
  • 1 lg
    lemon, zested

How To Make creamy cucumber bites

    Cut the cucumber into 32 round slices, each about 1/4-inch thick.

    In a bowl, mix together the goat cheese and shallot.
  • 3
    Spread about 1/2 teaspoon of the cheese mixture on top of each cucumber slice. Top each with about 1/4 teaspoon of fig jam. Sprinkle a pinch of thyme on top of each appetizer.

    Place appetizers on platter, sprinkle a pinch of lemon zest on each (or some) appetizer, and serve. If not serving immediately, wrap the platter with plastic wrap and keep in refrigerator for a few hours or until ready to serve.
