Ingredients For cowboy salsa

1 canblack eyed peas

1 canblack beans
-
2 cfrozen corn (small kernel)

1/2 cgreen pepper -chopped

1/2 csweet white or red onion

1 candiced tomatoes (rotel adds some spice if you like)

1 czesty italian dressing (can use lowfat or fat free)

3/4 tspgarlic or shallot salt

jalapeno peppers (optional)

multi-grain tortillas
How To Make cowboy salsa

1Mix all ingredients together in large bowl and allow to sit for at least 2 hours. I purchase tortilla scoop chips in regular or the multi-grain. A real hit at parties!! Enjoy!!

2I will also add touches of Cilantro, dill, and parsley to vary taste and color. It is a matter of your tastebuds. In the recipe I made today I used diced tomatoes with oregano.
