Ingredients For cowboy caviar

    avocados, cubed
  • 2
    tomatoes, large cubed
  • 1 can
    shoe peg corn (white)
  • 1 pkg
    frozen black eyed peas, steam cook and cool
  • 2/3 c
    fresh cilantro, chopped
  • 1 bunch
    green onions, chopped
  • DRESSING
  • 1/4 c
    olive oil
  • 1/4 c
    red wine vinegar
  • 2
    garlic cloves, minced
  • 1 tsp
    cumin
  • 3/4 tsp
    salt, or more to taste
  • 1/8 tsp
    pepper, or more to taste

How To Make cowboy caviar

    Mix and pour dressing over all.
  • 2
    Serve with lime or plain corn tortilla chips, or large crackers.
