A friend brought this to a party, very tasty. The jalapeno and cilantro are optional, if you like it hot use them. I use the scoop tortilla chips.

Ingredients For cowboy caviar

3ears of corn

1green pepper
-
1red bell peppers
-
1jalapeno, (optional)

1med shallot
-
1 canblack beans
-
1 canblack eyed peas
-
1/2 ccilantro, fresh (optional)

1/2 colive oil
-
1/4 clime juice
-
2avocados
-
2 tspsalt
-
2 tspsugar
-
1/4 tspcayenne pepper

1 bagtortilla chips
How To Make cowboy caviar

1Remove kernels from corn

2Dice all of the peppers and shallot. De-seed the jalapeno before dicing if you are using one. Note: instead of a single red pepper, buy the variety colors of mini peppers-yellow, orange and red

3Drain and rinse the black beans and black eyed peas.

4Chop cilantro if using it.

5Combine all ingredients ( except avocados) and mix well.

6Cover and chill for at least a few hours or overnight.

7Dice and add avocados shortly before serving.

8Serve with tortilla chips.
