Had something similar at a New Year's Eve Party. Since I was hosting a Packers vs Cowboys gathering, decided to make some to go with our taco bowls. Maybe it should be called Packers Caviar? Nah, doesn't have the same ring! Serve with crackers, tortilla chips, crudités or as part of a taco salad or bowl!

Ingredients For cowboy caviar

1 canblack beans, drained & rinsed (15 oz)

1 canblack-eyed peas, drained & rinsed (15 oz)

1 canwhite shoepeg corn, drained (14 oz)

1avocado, diced

1 Tbsplime juice
-
2roma tomatoes, diced or 1 cup grape tomatoes, halved

1/2 mdgreen pepper, diced
-
1/2red pepper, diced
-
1/2 mdonion, minced
-
4-6green onions, sliced
-
2 Tbspminced pimento (optional)

1 tspgarlic salt
-
1/2 tspgarlic powder
-
2 Tbspminced cilantro
-
1/2 cprepared italian dressing
-
salt and pepper to taste

red pepper flakes to taste
How To Make cowboy caviar

1Mix ingredients in large bowl. Sprinkle the lime juice on the avocado before you stir it in. Stir together. Adjust seasonings to taste.

2PS I happened to have a started jar of pimento in the fridge - otherwise wouldn't have included it!

3PPS Feel free to use "real" garlic instead of the garlic salt and powder!
