Never did like like those little fish eggs...just couldn't seem to acquire a taste for it so I have found ways to make "caviar" without it!! I'm dragging out all my entertainments recipes today and pulling my favorites...hope you all like them too!!!

Ingredients For cowboy caviar

2 Tbspred wine vinegar

1/2 tspup to 2 tsp frank's red hot sauce

1 clovemedium garlic , minced

1 dashpepper
-
1 can15 oz black beans, drained

1 can11 oz corn , drained
-
1ripe avocado , chopped approx 1 - 1 1/2 cups

1 cchopped tomatoes
-
1/4 csliced scallions, white and green parts

1/4 cfresh cilantro, chopped

tortilla chips
How To Make cowboy caviar

1Mix together the first 4 ingredients with 2 tsps olive oil, whisk well and set aside. Combine the rest of the ingredients (not tortillas)and gently stir to combine. Pour the dressing on top and stir just enough to coat. Spoon into a glass bowl and refrigerate covered until ready to serve.

2Great served with grilled chicken or fish too.
