I got this recipe from my sister-in-law and absolutely love it served with either club crackers or corn chips! I have made it a little bit more "diet" friendly by choosing lower fat ingredients. Yummy!

Ingredients For corn dip

  • 2 can
    mexi-corn
  • 8 oz
    low fat sour cream
  • 8 oz
    low fat mayonnaise
  • 8 oz
    low fat shredded mexican cheese blend
  • 1 c
    chopped green onions
  • 3
    jalapeno peppers, chopped

How To Make corn dip

  • 1
    Mix all ingredients together and let set in refrigerator for 1 hour or overnight. Serve with chips or crackers.

    If you like it HOT, leave peppers intact and just chop. If you prefer it MILD, deseed and devein the peppers before chopping. It will just have a slight kick then.
