My good friend Connie from Alabama has such a wonderful giving heart. When New Oleans flooded several years ago, she opened her home to a family that had lost their home in New Orleans due to the flooding. Actually, just the mother and her son came to live with Connie while their home was being rebuilt. The mother shared this recipe with Connie and Connie in turn shared it with me. These were such a big hit, I now make them for holidays every year. I think you will enjoy!

Ingredients For connie's spinach balls - dee dee's

2 boxfrozen chopped spinach

6eggs, beaten

1 csharp cheddar cheese, shredded

1 cparmesan cheese, shredded

1 smonion, chopped fine
-
1 tsppoultry seasoning
-
1 stickgarlic butter, melted (i could only find garlic butter at publix)

1 1/2 cherb dressing mix (this is found in grocery store next to stove top stuffing, this is toasted bread cubes that have been seasoned )

1Preheat oven to 375 degrees.

2Defrost spinach and drain well. Press liquid from spinach; set aside.

3Beat eggs, add cheeses, chopped onion, and poultry season; add melted butter and spinach; mix well. Fold in the herb stuffing mix. Roll into 1 inch balls.

4Bake at 375 degrees for 15 to 20 minutes.
