This is a special treat! We make many kinds of "roll ups" or "pinwheels", but this is our "dressed to impress" version! They make a beautiful presentation and they taste wonderful! We make these for parties and pot lucks! *** You can take away or add ingredients to taste.

Ingredients For chicken - cranberry pinwheels
- SPREAD

12 ozcream cheese, room temperature

2 Tbspdijon mustard
-
6 Tbspsour cream
- CHICKEN
-
1 or 2 lgchicken breasts, boneless and skinless (cooked, cooled and chopped small)
- OTHER FILLINGS
-
5green onions (minced)
-
1 - 1 1/2 ccraisins (dried cranberries) (lightly chopped)
-
1 3/4 cfeta cheese (crumbled)
-
1 3/4 cbaby spinach (lightly chopped)
- TORTILLAS
-
4 lgtomato tortillas
-
4 lgwhole wheat tortillas
-
4 lgspinach tortillas
- OPTIONAL:
-
pecans (chopped), blue cheese (crumbled), shredded lettuce

cooked crumbled bacon
-
shaved ham and thinly sliced swiss cheese
How To Make chicken - cranberry pinwheels

1Combine the Spread ingredients together. Set aside.

2Cook the chicken, cool it, chop it up. Set it aside.

3Chop the onions, Craisins, and spinach. Set aside. Crumble the feta cheese. Set aside.

4Spread the Spread on each of the tortillas. Sprinkle some of each of the toppings on each of the tortillas.

5Very tightly (yet gently) roll up the tortillas. Snuggly wrap them with Seran Wrap. Refrigerate for 2 hours.

6Remove from refrigerator. Remove Seran Wrap. Slice each tortilla roll into 10 - 12 sections. Lay them on a platter alternating colors of tortillas. Very pretty!
