Ingredients For cherry tomato basil and goat cheese salad

  • 4 c
    red and yellow cherry tomatoes, halved
  • 1/2 c
    minced scallions
  • 1/2 c
    fresh basil, thinly sliced
  • 2 1/2 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    balsamic vinegar
  • 1 clove
    fresh crushed garlic
  • kosher salt and freshly ground black pepper to taste
  • 3/4 c
    crumbled goat cheese
  • 1 Tbsp
    capers, drained

How To Make cherry tomato basil and goat cheese salad

    Put the tomatoes, scallions and basil in a large bowl and toss.

    In a small bowl, whisk together 2 tablespoons of the olive oil, The vinegar, garlic and the salt and pepper to taste. Pour over the tomato mixture and toss.

    Place the tomato mixture in a shallow serving bowl or on a platter. Top with the crumbled goat cheese and sprinkle with the capers.

    Drizzle with the remaining olive oil and add a bit more of the cracked pepper if desired and serve.
