Ingredients For cheesy spinach puffs

110-oz. box frozen chopped spinach, thawed and squeezed dry

1 cricotta cheese
-
1/4 cromano cheese
-
1/4 cmozzarella cheese
-
2eggs, lightly beaten with 2 tablespoons water
-
1 tspbutter, softened
-
1 pkgfrozen puff pastry, thawed according to pkg. instructions.

3-4 Tbspgarlic butter for brushing pastry dough

salt and pepper to taste
-
pinch garlic
-
red pepper flakes to taste
How To Make cheesy spinach puffs

1Preheat oven to 375 degrees F.

2Combine spinach, ricotta, romano, mozzarella, salt, pepper, garlic, egg yolks, softened butter and red pepper flakes. Mix well.

3Unfold puff pastry and cut into approx. 4" squares. Place a spoonful of spinach mixture in the center of each square. Dampen the edges of the dough with water and pull opposite corners up and over the filling, sealing, to make little pillows.

4Place pillows seam side down on an ungreased baking sheet with parchment paper about 2 inches apart. Brush each pillow with garlic butter (mix a few tsp. melted butter with a pressed garlic clove).

5Bake until golden brown, approximately 20-25 minutes. Serve warm.
