brother noal's marinated peppers

This recipe is from my half brother Noal. He is half Italian. This recipe is an old family favorite that I stole from him =0) Noal is an excellent cook also...we share recipes all the time. His recipe for Red Chile Sauce won me 4th place in the San Diego County Fair! These peppers are so simple, and sooo yummy! Make sure you add plenty of Salt.

Ingredients For brother noal's marinated peppers

6-8roasted bell peppers (you can use red, yellow, or orange peppers too)

1/2 colive oil, or to cover well

To Tastesalt & pepper
How To Make brother noal's marinated peppers

1Place whole peppers under the Broiler, turning every 5 minutes or so, until blackened. Place in bowl for 5 minutes to "rest". Remove skins under a small stream of water. Remove seeds and stems.

2Slice peppers into 1/4 inch wide strips. Place in bowl. Mix olive oil, salt & pepper with peppers. Let sit for an hour at room temperature.

3Use marinated peppers on Pizza, hambergers, Quesodillas, or on toasted baguette slices...there are SO MANY possibilities!! Use them on everything!
