Ingredients For broiled potato skins

4 lgpotatos

2 tspbutter, softened

1 cmonterey jack cheese with jalapeno peppers or your fav cheese

4bacon slices, crisp and crumbled

How To Make broiled potato skins

1Prick potatoes with fork to allow steam to escape.

2Bake potatoes in 425 oven until tender, about 1 hour.

3Cool slightly and cut each potato lengthwise into halves, scoop out insides, leaving a 3/8 inch shell.

4Spread inside of shells with butter, sprinkle with salt.

5Cut each potato into six pieces, sprinkle with cheese and bacon.

6Set oven control to broil or 550.

7Broil potato pieces about 5 inches from heat until cheese is melted, about 2 minutes.

8Makes 48 appetizers.
