This salsa recipe won 2nd place in our United Way Cook-Off at work. The addition of olive oil, cumin, cilantro and lime juice give this salsa a very unique flavor.

Ingredients For black bean and corn salsa

1 canblack beans, drained

1 canshoepeg corn, drained

4jalapeno peppers, finely chopped, remove seed and veins to make it less hot

1 mdtomato, chopped

1/2 cred onion, chopped

1whole lime (juice)

3 Tbspolive oil

1 tspground cumin

1/8 cchopped cilantro
How To Make black bean and corn salsa

1Mix all ingredients together and chill at least 4 hours. This salsa is better the longer it sits. Serve with tortilla chips. ENJOY!
