This salsa recipe won 2nd place in our United Way Cook-Off at work. The addition of olive oil, cumin, cilantro and lime juice give this salsa a very unique flavor.

Ingredients For black bean and corn salsa

  • 1 can
    black beans, drained
  • 1 can
    shoepeg corn, drained
  • 4
    jalapeno peppers, finely chopped, remove seed and veins to make it less hot
  • 1 md
    tomato, chopped
  • 1/2 c
    red onion, chopped
  • 1
    whole lime (juice)
  • 3 Tbsp
    olive oil
  • 1 tsp
    ground cumin
  • 1/8 c
    chopped cilantro

How To Make black bean and corn salsa

  • 1
    Mix all ingredients together and chill at least 4 hours. This salsa is better the longer it sits. Serve with tortilla chips. ENJOY!
