Ingredients For big ole bill's sweet heat salsa

  • 2 lb
    red onions ( diced )
  • 1 lb
    bell pepper ( diced )
  • 1 tsp
    salt
  • 1/2 tsp
    coarse black pepper
  • 5 Tbsp
    minced garlic
  • 2-3 Tbsp
    canola oil ( for frying )
  • 1
    jalapeno (diced, with or without seeds, your choice )
  • 1 bunch
    fresh cilantro (chopped )
  • 14 oz
    can diced tomatoes
  • 15 oz
    can tomato sauce
  • 6 oz
    can tomato paste
  • 1 c
    sugar
  • 1/2 c
    red wine vinegar
  • 1/3 c
    lime juice

How To Make big ole bill's sweet heat salsa

    In a 5qt. pot fry the Onion, Bell Pepper, salt, pepper and Jalapeno Pepper until the onions and bell pepper are soft over medium / high heat 5 to 10 min minutes

    Add the garlic and cook another 2 minutes

    Add the Diced Tomatoes, Tomato Sauce and Tomato Paste stirring well and heat for 5 minutes.

    Add the Cilantro, Red Wine Vinegar, Lime Juice and Sugar. Stir well and bring to a boil.

    Turn heat down to a simmer and cook until desired consistency. ( I like mine on the thick side about 30 to 45 minutes )
