I had this really nice French Bread and a small log of high quality Goad Cheese. So I made a Bacon Goat Cheese Crostini...It was good, But The Bacon overshadowed the Goat Cheese a little bit...So...Looking back, This is the recipe I SHOULD'VE DONE lol. But, we live and we learn. So heres the Recipe I wish I would've done. I hope you enjoy! :)

Ingredients For balsamic goat cheese bruschetta

12 slicemedium sized crusty italian bread

1/2 cbalasmic vinegar
-
1/2 cdiced tomatoes
-
1 cgoat cheese (brought to room temp)

Drizzleolive oil
-
1/4 tspdried italian herbs or herbes de provence
How To Make balsamic goat cheese bruschetta

1Dice the Tomatoes...You need 1 cup of Diced tomatoes. Not 1 Cup of Tomatoes Diced...But I didn't have to tell you that ;)

2In a small sauce pan, Add the 1/2 cup of Vinegar, and reduce on medium heat, by half. Once Reduced, set aside to cool/

3Mix the Herbs with the Balsamic, then add the tomatoes, stir and set aside.

4Drizzle the bread with Olive Oil on both sides. Then, In a Grille Pan or open flame grill, Grill the bread until slightly charred and crusty
