I made these tasty appetizers for our Christmas Eve Party. They were a huge hit. I tripled the recipe, and there were no leftovers. A must-try for bacon and tomato lovers!

You'll find a variety of ways to enjoy these bacon tomato cups. Chopped onion, tomatoes, cheese, and crumbled bacon are baked in a biscuit crust. The subtle hint of Italian seasoning and onion is very appetizing. We weren't expecting them to puff up as they did! These cups would be a savory party appetizer with other finger foods. Or, they'd be tasty alongside a green salad.

Ingredients For bacon tomato cups

  • 16 slice
    bacon
  • 2
    medium tomatoes, chopped
  • 1/2 c
    chopped sweet onion
  • 8 oz
    shredded mozzarella or Colby Jack
  • 1 c
    mayonnaise
  • 2 tsp
    dried Italian seasoning
  • 2 can
    refrigerated buttermilk biscuits (16 ounces each)

How To Make bacon tomato cups

  • Bacon cooking in a skillet.

    Preheat oven to 375 degrees F. Lightly grease a mini muffin pan. In a skillet over medium heat, cook bacon.
  • Bacon, tomato, onion, cheese, mayonnaise, and seasoning in a bowl.

    Crumble the bacon. Add to a bowl and mix with the tomato, onion, and cheese. Then mix in the mayonnaise and Italian seasoning.
  • Biscuit halves pressed into a muffin tin.

    Separate biscuits in half horizontally; press each half down into a muffin cup to create a cup of dough.
  • Tomato mixture poured into cupcake tin.

    Fill each cup with the bacon and tomato mixture.
