1Cook eggplants, whole, over charcoal or a gas burner till soft and charred ( My method is in oven at 350 till soft ) Let cool

2Peel off skin and stem, cut in manageable pieces and put in food processer, add all ingredients.

3Process till well blended. BETTER MADE A DAY AHEAD SO FLAVORS CAN MESH...Can garnish with chopped tomatoes, or Greek olives or both
