Ingredients For baba-ganouj

1 kgeggpant
-
1/2 ctahini sauce
-
1/2 cyogurt
-
3 Tbspred vinegar or pomegranate molasses or lemon juice
-
salt to taste
-
1 tsporegano, dried , or pepperment leaves
How To Make baba-ganouj
-
1-Make slits in the eggplants before roasting in the oven Sometimes I wrap it with aluminum foil -Roast for half an hour -Cut in the middle and scoop out the pulp into a bowl -Gently mash it with a fork -Let cool before adding anything else -You may freeze the roasted eggplants for future use

2-Add tahini sauce, yogurt vinegar and salt. Combine well in a mixing bowl .

3Add olive oil on top and serve as an appetizer with pita bread .

4Garnish with cut parsley, or sprinkle cumin and sumac in a decorative way.
