This is such a great treat. I love hummus and avocados, so adding them together is a bonus. By using pine nuts instead of the tahini paste is a unique twist. this is great with raw vegetables or any kind pita chip. It is a favorite when you have company over, you may want to double the recipe because it will be gone quickly.

Ingredients For avocado hummus

  • 2
    avocados
  • juice of 2 limes
  • 1 can
    chick peas, drained and rinsed
  • 1-2 sm
    cloves of garlic (if they are small 2, but if large 1 should be good unless you just want a litte more)
  • olive oil for consistency
  • 3-4 Tbsp
    plain yogurt
  • 3/4 c
    pine nuts, lightly toasted

How To Make avocado hummus

  • 1
    Cut avocado in half and remove pit. Toast pine nuts in a small pan with garlic. Scoop out the flesh and place it in a food processor or blender with chickpeas, lime juice, pine nuts, garlic, and a little olive oil. Process until smooth and creamy, adding more liquid if desired.

    Chill for an hour. Serve with pita chips or raw vegetables.
