Ingredients For artichoke nibbles

1 smonion, chopped

1 clovegarlic, minced

1 tspvegetable oil

2 jarmarinated artichoke hearts, chopped

4eggs

2 Tbspfresh parsley, minced

1/4 tspsalt
-
1/8 tsppepper
-
1/8 tspdried oregano
-
1/8 tsphot pepper sauce

2 ccheddar cheese, shredded
-
1/3 ccrushed saltine crackers
How To Make artichoke nibbles

1In a small skillet, sauté onion and garlic in oil until tender. Stir in artichokes. Remove from the heat; set aside.

2In a large bowl, whisk the eggs, parsley, salt, pepper, oregano, and hot pepper sauce. Stir in the cheese, cracker crumbs, and artichoke mixture.

3Pour into a greased 11- x 7- x 2-inch baking dish. Bake, uncovered at 325º for 25-30 minutes or until a knife inserted near the center comes out clean.

4Cool for 10-15 minutes before cutting into 1-inch squares. Serve warm.
