Ingredients For artichoke loaf

    artichoke hearts (small jars)
  • 4
    eggs
  • 1
    onion (small)
  • 1
    garlic clove
  • 1/4 tsp
    oregano, dried
  • 1 1/2-2 c
    cheddar cheese, shredded
  • 3/4 c
    bread crumbs

How To Make artichoke loaf

    Preheat oven to 350. Finely chop onion and garlic; set aside. Drain artichoke hearts, reserving liquid in frying pan. Add onion and garlic; saute until soft and translucent. Set aside to cool.

    In a mixing bowl, add chopped artichoke hearts and eggs; mix thoroughly. Toss in onions and garlic. When cool, mix in oregano, cheese and bread crumbs. Pour into an 8x8 or 9x9 square baking dish, spreading evenly, for 30-45 minutes.
