Ingredients For stuffed avocados

  • 1 lb
    cooked lobster, cubed or chopped
  • 1/2 c
    mayonnaise
  • 2 tsp
    olive oil, extra virgin
  • 1 tsp
    vinegar
  • 1 tsp
    salt
  • 4 sm
    avocados, halved, carefully peeled
  • 1/4 tsp
    paprika
  • 1/4 tsp
    black pepper
  • 8
    green olives, optional
  • red pimentos, canned,

How To Make stuffed avocados

  • 1
    Cut avocados in half and peel carefully. Mix vinegar, oil, paprika, salt and pepper. Marinate the avocadosin the mix. Place in refrigerator for about 15 minutes.

    Cut lobster in cubes, mix with mayo. Fill avocado halves with lobster. Decorate with the olives and pimentos.

    Serve cold over lettuce leaves.
