Ingredients For spiced rum mojito shrimp cocktail

  • 1 Tbsp
    olive oil
  • 1 lb
    shrimp, peeled and deveined
  • 2 tsp
    caribbean or cajun seasoning
  • 1 clove
    garlic, peeled and crushed
  • 1
    lime, grated peel and juiced
  • 2 oz
    spiced rum
  • 1
    cucumber
  • 1
    firm tomatoe
  • salt to taste
  • 4 lg
    mint leaves
  • 1
    lime-sliced for garnish

How To Make spiced rum mojito shrimp cocktail

    Peel and de-seed cucumber. Small dice tomato and cucumber. Rough chop mint. Combine tomato, cucumber, mint, and season with salt. Divide amoung glasses.

    Add oil to large skillet over medium heat. Add shrimp and Saute for 4-5 min, until almost done. Add Caribbean seasoning, garlic, lime juice, grated peel and (away from the heat) the spiced rum. Return to heat and saute 1-2 min. more Arrange shrimp on edge of cocktail class and garnish with lime slice.
