2COOK'S NOTE: If you prefer to use regular cooked rice, follow the package directions, and add the seasonings and butter to the broth, then add the veggies 8 minutes before the rice is cooked. This is a good side dish for an excellent quick lunch or dinner with some sliced cooked chicken, fish or shrimp. For beef, use beef broth when you make the rice.

3VARIATIONS: To make a rice bowl: If you purchase cooked, ready to eat shrimp, frozen in the bag, take out enough for a meal, and then pour water over it to thaw the shrimp, and drain, then add to the rice when you add the peas carrots. To make a delicious rice salad: Serve the rice hot in a bowl, add 1 cup of Romaine lettuce, chopped, one medium tomato chopped, and 1 tablespoon of red onion, chopped fine. (Cooked shrimp or sliced cooked chicken is optional) Drizzle all with olive oil and red wine vinegar, salt and pepper. Toss and eat. Create new and endless variations! Enjoy!
