Ingredients For shrimp sliders
- SLIDERS

1 lbshrimp, peeled, deveined, quartered and divided

4 Tbspred peppers, roughly chopped and divided

4 Tbspgreen onions, roughly chopped and divided

1 Tbspfreshly squeezed lemon juice
-
1 tspold bay seasoning
-
1/2 tspmild paprika
-
1/2 tsplemon zest
-
1/2 tspground himalayan sea salt, or to taste
-
1/4 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)
-
1 lgclove garlic, halved
-
1 Tbspfresh dill, chopped
-
3/4 cpanko breadcrumbs
-
1 Tbspcanola oil, or as needed plus more for hands
-
lettuce and tomatoes, for garnish
- MAYO SAUCE
-
1/2 cmayo
-
1 tspsriracha sauce, or to taste
How To Make shrimp sliders

1In the bowl of a food processor, add ½ lb. shrimp, 2 tbsp. red peppers, 2 tbsp. green onions, lemon juice, Old Bay seasoning, paprika, lemon zest, salt, pepper and garlic.

2Process until the ingredients are finely chopped and the mixture turns into a thick paste, about 30 seconds, cleaning the sides of the bowl.

3Transfer the mixture to a medium bowl and add the remaining ½ lb. shrimp, the remaining 2 tablespoons red peppers as well as green onions, dill, and ¼ cup of panko breadcrumbs.

4Combine all the ingredients until nicely blended before adding another ¼ cup of breadcrumbs, mix again and add the last ¼ cup.

5With greased hands, scoop about 2 ½ tablespoons and form a patty. Place on a baking sheet lined with a silicone mat while making the others.

6Cover with plastic wrap and transfer to the fridge for at least 30 minutes but ideally, 2 hours is better.

7Meanwhile, mix the sauce ingredients, cover and chill until ready to serve.

8In a large skillet over medium-high heat, add 1 tablespoon of canola oil and when it’s hot, add the shrimp patties.

9Grill for 5 minutes before flipping them and grilling the other side until nicely browned, about 3 to 4 minutes.

10Spread mayo sauce on the top and bottom buns, place lettuce then the patties on top followed by tomato slices. Makes 9 sliders.
