Ingredients For seafood kabobs with a spicy pimiento sauce

  • 1/2 c
    olive oil, light
  • 4 tsp
    lemon juice, fresh
  • 1/2 Tbsp
    salt and pepper
  • 48 md
    shrimp, peeled and deveined,tail left on.
  • 48
    uncooked fresh sea scallops
  • 48 md
    fresh portabello mushrooms stems removed
  • SPICY PIMIENTO SAUCE
  • 1 c
    mayonnaise
  • 2 4oz jar
    sliced pimientos,drained
  • 2 clove
    med garlic minced
  • 1 sm
    onion,diced small
  • 1 tsp
    red pepper flakes

How To Make seafood kabobs with a spicy pimiento sauce

    pre-heat gril for med heat. Wile grill is heating. In a food processor add mayonnaise,garlic,onion,pimientos,and red pepper flakes.Blend on high untill smooth . Set aside. .In a bowl add lemon juice,olive oil, salt & pepper mix well

    On the skewers thread shrimp,mushroom,and scallops.You well need 16. 14" metal skewers Fill all skewers, then brush with lemon mixture. Grill over med heat for 4-5 minutes turning and basting once.Shrimp will turn pink. And scallops will be opaque... serve with spicy pimiento sauce.

    You can broil also.put food on a broiler pan. place 4-6 inches from heat for 4-5 minutes. Turning and basting once.
