juice of 4limes, enough to cover the scallops in a bowl

2 Tbspparsley, chopped

1/2yellow bell pepper, diced small

5cherry tomatoes, quartered

salt and pepper

microgreens, for garnish
How To Make sea scallop ceviche

1Place the scallops in a bowl and cover with lime juice. Let sit in the fridge for at least an hour. Drain.

2Mix remaining ingredients into the scallops and serve immediately, garnished with microgreens.
