Ingredients For sea scallop ceviche

  • 6 lg
    sea scallops, cut into quarters
  • juice of 4
    limes, enough to cover the scallops in a bowl
  • 1 sm
    shallot, chopped
  • 2 Tbsp
    parsley, chopped
  • 1/2
    yellow bell pepper, diced small
  • 5
    cherry tomatoes, quartered
  • 3 Tbsp
    olive oil
  • salt and pepper
  • microgreens, for garnish

How To Make sea scallop ceviche

  • 1
    Place the scallops in a bowl and cover with lime juice. Let sit in the fridge for at least an hour. Drain.
  • 2
    Mix remaining ingredients into the scallops and serve immediately, garnished with microgreens.
