This is my recipe for shrimp salad with something a little different. It's a little spicy, a little sweet; creamy and yet crunchy, kind of a yin yang thing. It's great to eat all by itself, or as a sandwich, on crackers for an appetizer, or to use for stuffed tomatoes.

Ingredients For sassy shrimp salad

1/4 clow fat mayonnaise (or regular mayo)

1 tspcocktail sauce

1/4 to 1/2 tspsriracha pepper sauce

1 small pinchsea salt

1 cplain cooked shrimp, chopped & moisture blotted

2 tspsweet relish (see *note)

scant 1/4 cchopped celery (about 1 medium-small stalk)

1 mdromaine lettuce leaf, torn (optional)
How To Make sassy shrimp salad

1In a medium-sized mixing bowl, combine mayonnaise, cocktail sauce, sriracha sauce and salt.

2Add shrimp, relish or chopped pickles and celery; mix well. Cover and chill for 1/2 hr before serving.

3Serve on bed of torn or shredded lettuce or inside tomatoes that have been hollowed for stuffing.

4(*NOTE: You may use sweet pickle relish, chopped sweet pickles, chopped bread and butter pickles or green tomato relish, my personal favorite.)

5Cover and refrigerate leftovers.
