Ingredients For roquefort stuffed shrimp

12large or jumbo shrimp

3 ozroquefort or blue cheese
-
3 ozcream cheese, softened
-
salt to taste
-
cayenne pepper to taste

2/3 cfresh parsley, minced

parsley sprigs for garnish around serving platter
How To Make roquefort stuffed shrimp

1Cook shrimp (shell on) in boiling salted water (can add shrimp/crab boil to the water)

2Drain shrimp and allow them to cool slightly. Peel shrimp, leaving tail on, and clean out vein. Make a pocket the length of the shrimp, but do not cut through.

3Blend roquefort and cream cheese in a food processor or with a mixer. Add salt and cayenne pepper to taste.

4Stuff a small amount of cheese mixture into the cavity of the shrimp - approximate 2 teaspoons.

5Using the stuffed side of the shrimp, dip it into the minced parsley.

6Served chilled.
