It's famous the world over, but Australia really embraced the prawn cocktail as its own in the 1970s. It was almost the beginning of fine dining, Aussie style. This used the traditional Rose Marie sauce.

Ingredients For prawn cocktail

1 lbfresh cooked prawns already peeled, and deveined

2 1/2 ciceberg lettuce , finely sliced

lemon wedges

fresh parsley, finely chopped
- SAUCE

2/3 cmayonnaise

1 Tbspketchup

1 tspworcestershire sauce

1 tspfreshly grated horseradish

tabasco sauce, to taste

pinchcayenne pepper
How To Make prawn cocktail

1Check to make sure prawns are completely peeled and deveined.

2Mix together sauce ingredients in a bowl large enough for all the shrimp.

3Toss prawns with sauce.

4Put a small bit of lettuce in martini glass first.

5Next put in prawns. Finish up with lemon and parsley..
