Ingredients For poseidon octopus salad

1 lbbaby octopus, cleaned

1 mdcucumber, chopped

2 mdroma tomatoes, chopped

1/2 smred onion, chopped

1/4 ckalamata olives, sliced

2 Tbspitalian parley, chopped

1-2 smchili peppers, finely chopped
- GREEK DRESSING

1/3 colive oil, extra virgin

2-3 Tbsplemon juice, fresh

2 tspall purpose greek seasoning
-
1 tspgranulated garlic
-
1 tsporegano, dried

1 tspblack pepper
How To Make poseidon octopus salad

1clean octopus
-
2boil octopus for 5-6 minutes in water seasoned with season salt of choice. **do not over cook** place in ice bath to stop cooking. drain

3chop and slice all veggies. cut octopus into pieces

4in a small mixing bowl combine the dressing ingredients. mix well, in a mixing medium size bowl combine all the other ingredients. add dressing and toss well

5plate up, serve and enjoy
