1/2 cmayonnaise

1/2 tspgarlic clove, minced

3 dashhot pepper sauce

2 tspworcestershire sauce

2 lbcrabmeat

1/2red bell pepper, minced

1/2yellow bell pepper, minced

2celery stalks, chopped fine

1/2red onion, minced
-
1/2jalapeno, peeled and minced

3/4 cbread crumbs
- SAUCE INGREDIENTS

2 tspshallots, minced

2 cwhite wine, dry
-
2 cheavy cream
-
4 Tbspdijon mustard
How To Make maryland style crab cakes

1Crab cakes: Combine egg, mayo, garlic, hot pepper sauce, worcestershire, salt and pepper; mix well to make a sauce.

2Add pre-cooked crab meat, peppers, onion, celery and jalapeno.

3Sprinkle breadcrumbs over mixture.

4Carefully mix with hands to combine well; divide into 18 parts and each into a biscuit size cake.

5Preheat oven to 450, then heat skillet with a mixture of butter and oil (1/2 and 1/2).

6Cook cakes to light golden brown on one side; turn over and place in oven to bake 5 mins.- Do not overbrown.

7Sauce: Boil shallots and wine until reduced by 3/4; stir in mustard then cream. Reduce to desired consistency; strain and serve.
